Fruited Spinach Salad


Ingredients

1 11 oz can Mandarin orages
¼ C. olive or vegetable oil
3 T. raspberry jam or spreadable fruit
1 T red wine vinegar
1 package fresh spinach or Romaine, torn (either a bag of lettuce/spinach or use fresh)
1 red apple - chopped
1 C. pecans - chopped and toasted (or not)

Directions

Drain oranges, saving ½ C. of juice and combine it with the jam and vinegar.
Shake it all together if you can or stir it really well.
Put clean washed lettuce/spinach in a large salad bowl.
Toss in the apple, oranges and pecans.
Right before you serve the salad, pour the dressing over top and stir it once or twice.
Very cool and fresh on a hot day!
