Pralines


Ingredients

2 C. white sugar
2/3 C. boiling water
 ½ t. baking soda
¾ C. evaporated (Pet) milk
1/3 C. white corn syrup
2 C. pecans
1 t. vanilla (optional)

Directions

In a large pot, add sugar, evaporated milk, water and corn syrup.
Bring to a boil.
Add baking soda.
Bring to a boil again.
Add pecans.  Stir constantly.
Continue cooking until it reaches a firm ball stage.
Remove from heat.
A teaspoon of vanilla may be added if desired.
Beat until mixture thickens and loses shiny gloss.
Drop by spoonfuls onto waxed paper.  (Spread newspapers beneath waxed paper to keep it from sticking to your work surface).
If mixture becomes too hard, add a little hot water.
